Job overview
The Head Chef role is an exciting new post based at our in-patient site, Birch Hill Hospital, in Rochdale, where we deliver in-house catering services for our in-patient wards and retail staff canteen. We are looking for someone who is passionate about delivering quality catering services, whilst leading and engagement an in-house catering team.
There is lots of scope in the role to regularly review and update the menus and encourage staff to input, as well as engage directly with our service users at Birch Hill and Stansfield Place for regular feedback.
The postholder will not be included as a working chef to the rota, but will be expected to support with relief shifts during absence and annual leave periods. Predominantly working Monday to Friday with the flexibility to cover weekends for relief for annual leave and sickness and or the needs of the service. The postholder will be supported by an experienced management team and the Food Services Manager.
Main duties of the job
The postholder is responsible for supervising the day-to-day operations of the in-house catering services delivered from the Birch Hill Hospital (BHH) kitchen. The postholder shall support the Food Services Manager to ensure that the services effectively operate 7 days a week, 365 days per year to produce quality meals for service users at BHH and Stansfield Place, as well as the staff restaurant. The postholder will be responsible for the day to day management of the in-house catering team at BHH, whilst producing daily production plans. This also includes management of rotas, stock taking, HACCP system, orders and invoicing.
The postholder will act as the first point of contact for wards in relation to any issues or queries with the daily catering services at BHH and Stansfield Place. The postholder will also visit these wards with the Food Services Manager for feedback from staff and service users and check the quality of food at the point of service. . The postholder will support the Food Services Manager with regular reviews of the staff restaurant and ward menus at BHH and Stansfield Place.

Education/Qualifications
Essential criteria
- Intermediate Certificate in Food Hygiene and HACCP principles
- City and Guilds 706/2 or NVQ level 3 Catering
Desirable criteria
- Advanced Certificate in Food Hygiene
- HCA membership or equivalent hospitality membership
- IOSH Managing Safely or equivalent
Experience
Essential criteria
- Experience supervising a team in a kitchen environment
- Experienced within quality and monitoring of food service
- Experience working in a kitchen in a hospital
- Experience of staff planning and rota management
- Experience of cooking meals in a hospital as a qualified chef
- Experience monitoring stock, ordering etc. in a kitchen
Desirable criteria
- Experience working in a mental health NHS Trust
Knowledge
Essential criteria
- Knowledge of legislative requirements relating to catering
- Knowledge of the NHS National Standards of Healthcare Food and Drink
- Knowledge of the annual PLACE assessments
